Water kefir produces a very fizzy beverage. A healthy alternative to soda or sweetener laden drinks, it can be flavoured with fruit, fruit juices or herbal teas resulting in a fantastic tasting beverage.

These products ferment at room temperature and require no special equipment. Coconut water alone does not contain enough sugar for water kefir to successfully ferment.

At this point, your water kefir should still taste sweet. For fizzy water kefir, it is important to use something fully airtight in the second fermentation process. You only need 2 ingredients to make water kefir, water / coconut water and sugar. It also carries a risk breaking down into the mixture due to the acidness of water kefir.

Until we know the exact microbial content of our kefir grains let’s assume that there are up to 15 different species present.

As water kefir is a living product, no one can predict how your grains will behave. It is best to use cane sugar. We find screw lid style bottles suitable for fermentation work best with water kefir. Rubber bands also come in handy to secure the cover to the jar. We only use organic golden granulated cane sugar with our water kefir. You also need something to cover your jar with. The colder they are kept, the slower they will metabolize the sugar. The beneficial bacteria and yeasts present in the grains metabolize the sugar and turn it into actic acid. As with many probiotic foods and beverages, that faintly fermented flavor is an acquired taste – especially if you’re accustomed to overly sweet, sugary beverages. It is important for some sugar to remain for the carbonation process to work. Best stored in the fridge if the product can not be activated on arrival. Honey has antimicrobial properties and will damage your water kefir grains or delay their proliferation. We'll assume you're ok with this, but you can opt-out if you wish. Alternatively, you can use bottled mineral water.

You can drink this right away if you wish. You also need some bottles to store your water kefir in.

Water Kefir Vs Milk Kefir- What is the difference? Once you receive your organic water kefir grains from us, it’s important to get them fermenting as soon as possible. Always allow any water to cool back down to room temperature (20c) if needed before continuing. These bacteria feed on sugar and produce lactic acid, alcohol (ethanol), and carbon dioxide, yielding a fermented carbonated beverage. Cover the jar and leave it at room temperature (20c) out of direct sunlight for 48 hours. In time you will learn what works best for your culture. If you’re planning on going on holiday, you’re probably concerned about leaving your water kefir grains unattended. This is not as diversity-rich as milk kefir, but makes a lovely fizzy drink that is probiotic, much lower in sugar, and an excellent substitute for sugary or aspartame-laced fizzy drinks.

It is now time to flavour your strained water kefir. So although it might seem wasteful to discard it, you would most likely just be drinking some very sweet sugar water. Kefir grains * Our Kefir grains are only grown in Organic Whole Milk *These grains are ready to brew, they do not need rehydrating (unless you choose dehydrated grains*), simply pop them in milk/Sugary water and off you go. You can also use beet sugar. Add the kefir grains into the water. It is also useful to have something to decant your strained mixture into.

What' the difference?

Water kefir is remarkably versatile. So in total you will receive 8 tablespoons (110-130g) of grains.

This is unhealthy for your grains.

We recommend paper kitchen towels as they are easy to discard and replace.

Leave them for 48 hours at room temperature (ideally around 20c). Never use boiling/hot water. You grains will grow quite quickly. Water kefir grains are having a “little rest” – please message me to be added to the waiting list – they need to replenish themselves which should take about a week or so. Important: even though coconut water contains naturally occurring sugars, you will still need to add additional sugar when making coconut water kefir.
